Toffee, fudge and caramel start from almost the same ingredients. What separates them is how hot the sugar gets and what happens as it cools. Understanding that tells you why fudge crumbles, toffee snaps, and caramel runs.
Boiling a sugar syrup drives off water. The less water left, the harder it sets. Sugar work is measured in stages, and the three sweets sit at different points:
This is the interesting part, and it is not about temperature at all. Caramel is left alone as it cools, so the sugar stays dissolved and it sets smooth and chewy. Fudge is deliberately agitated as it cools — beaten or stirred — which forces the sugar to crystallise into millions of tiny crystals. Those crystals are what give fudge its short, crumbly, slightly grainy bite.
Get the crystals too big and the fudge is gritty. That is the whole craft of it: same ingredients, same temperature, completely different sweet depending on when and how hard you beat it.
Two reactions, and most of these sweets use both. Caramelisation is sugar breaking down under heat into hundreds of new compounds — that is the bitter, nutty depth. The Maillard reaction is sugar reacting with the proteins in milk or butter, which produces the rounder, buttery, toasted notes. It is why toffee made with condensed milk tastes richer than toffee made with water.
Opposite problems, which is why they should not share a tub. Toffee and honeycomb are hygroscopic — they pull moisture out of the air and turn tacky, so they need to be sealed and dry. Fudge dries out and goes hard, so it needs airtight storage for the reverse reason. Put them together and the fudge loses moisture to the toffee and both are worse.
Toffee, fudge and caramel start from very nearly the same pan: sugar, a dairy fat, and usually
glucose syrup. What separates them is how hot the syrup got and what was done to it as it
cooled. Nothing exotic is added to turn one into another.
So fudge is the odd one out, and not because of its ingredients: it is the only one of the three
that is deliberately crystallised. Toffee and caramel are kept smooth on purpose;
fudge is made grainy on purpose, at a scale too small to feel as grit.
Almost every fudge failure is a crystallisation problem. Beaten too hot and the crystals grow
too large, which is the gritty fudge nobody wants. Not beaten at all and it never sets, staying a
caramel. It is a genuinely difficult sweet to make consistently, which is why good fudge costs
what it does.
This is also why fudge does not keep as well as toffee. The crystal structure keeps changing
slowly, so it dries and hardens over weeks. Toffee, with almost no water in it, will sit happily
for months.
Traditional recipes use butter and either condensed or evaporated milk, which is where the
flavour comes from — the browning is not just sugar caramelising but the milk proteins and
sugars browning too. Cheaper versions substitute vegetable fat, and you can taste the difference:
they are sweeter and flatter, and they melt differently in the mouth.
The ingredient declaration on every product page tells you which you are getting. It also tells
you why nearly all of these contain milk, and therefore why they are not vegan even when nothing
else in them is animal-derived.
Cool, dry, sealed, and not in the fridge — condensation is what makes toffee sticky and
fudge weep. Toffee that has gone tacky has picked up moisture from the air; it is not spoiled, but
it will not come back.
